Wasabia japonica is valued for its fiery flavour and purifying qualities. It is essential for sushi, perfect for noodle dishes and adds zest to salad dressings, marinades, mayonnaise, vinaigrettes and dips.
To serve as a condiment, mix a small amount of hot water with a little powder to make a thick paste and allow to rest for a minute or two. Hot water and resting fully releases the fiery qualities of wasabi.
